...The chip tube is great for short smokes - like 2 hours or less (burgers, salmon, etc.) I drop in 4 or 5 dry chips every 20-30 minutes. For longer smokes I use the A-MAZE-N pellet smoker (AMNPS) - look at Home Depot...
Any tips for getting better bark in an MES30 with mailbox mod and AMNPS?
I've done 4 rib cooks and 1 pork butt, and i'm having trouble getting consistent bark without skipping a wrap stage. For instance, the ribs I made yesterday were on the smoke for 6 hours straight, no wrap. The bark was...
Congrats on the success!
Airflow is the key thing that makes cold smoke food tasted ashy, bitter, or horrible. This is caused by stale smoke that sits there, loses oxygen, and becomes plain nasty.
If you can keep a draft going where the smoke keeps moving through the smoker and up and out...
...the topic but nothing directly answers my question: how do you effectively increase NO production in a mailbox modded electric smoker with AMNPS?
I am being a stubborn idealist and refuse to accept the current wisdom that "you can't get a smoke ring in an electric smoker without curing...
Thanks for the info. I read Bear's 101's and a ton of posts regarding the AMNPS dying. I forgot to mention I am only at 1,500 ft.
I was going to do the mailbox mod, but not if the AMNPS keeps going out. I bought it for a 12-hour smoke. I'm looking at figuring out how the rinky-dink MES Cold...
1500' isn't much comparing it to 3,000', but next to my 300', that's pretty high.
I would recommend the Amazing Tube smoker, if your AMNPS doesn't work in a mailbox.

Yes you can use dust in the AMNPS Tray.
But you shouldn't use pellets in the AMNS Dust tray.
Length of time burning for pellets is more consistent than the length of time for dust burning.

Funny you should mention that. I just ordered one to replace mine that has seen better days.

They have the pellets as well.
I have an MES40, the older/more reliable model (glass in the door, control at top rear) that's available. I upgraded to an Auber 1510 PID for better temp control, which is very good. Some spare grills in it etc. This served me for a good 5-7 years, til I got the charcoal bug and replaced it with...
Following DaveOmak's post on the subject, I bolted 4 carriage bolts to the bottom of the AMNPS to act as legs. This keeps the AMNPS elevated off the wood and allows better air flow to the pellets. The inside of my "mailbox is completely blackened from heat and smoke, but this has never been a...
Me either. Welcome Jack. Not sure if you've been lurking but would say most of us here are running a tray or tube. Acronym is AMNPS Amazen pellet smoker. I get around 12hrs from pellets in the tray and 4-5 from a tube. Not my video and did not watch the whole thing but covers the basics.
Basically the mes holds enough moisture without adding water but you could if you want people that use the amnps tray inside usually dont add the water because it puts the pellets out. As far as the vent to keep the smoke fresh.
Kind of...have cherry going in amnps, had hickory in my tube, it ran out so just refilled with pecan. So no, not just by itself. Only used apple and pitmasters choice before but now that I have a pellet smoker I have many flavors!

Here’s a pic of one if my AMNPS trays after a 3 hour burn while smoking some of our Salmon.
Worked perfectly in my mailbox while burning some Alder.
Small 1/2” cage under the tray to keep it off the mailbox floor.
