    Sounds just like the last one I did except I didnt wrap it. It was probe tender in under 8 hours. I didnt reheat it though, just kept it in the cambro til dinner time since it finished early. It looks good, nice smoke ring on it and juicy. I would help with the leftovers.

    You need to read the specs and requirements in the manuals. Each item will have different requirements. Adding a insulation blanket is a typical option. When I built mine, I debated and decided not to chance it. I used metal studs with durarock facing. Had granite counters and rock finish.

    It is done and probing tender. Put into an aluminum pan and into the warming chamber for a couple of hours. Will vacuum seal the point and flat separately and reheat tomorrow.
