There's really no need to soak chips for use in a MES. Just put in less chips, more often than you would if soaked, and you'll get a nice gentle smoke that's stays consistently smoking for great results.

Here I have this nice set of ribs in the fridge but thought I had to wait until Sunday before I could eat them because of my schedule. Now that I know they're just as good done in 40 minutes (and just as smokey if I boil them in beer?!?) I'll be eating ribs before I leave today.
I've got a Hobart Handler MIG 180. For my uses it's perfect. It can go low enough to do thin metals that require little heat, but high enough to weld 1/4" steel in most conditions, and thicker steel in better conditions and more passes.

Absolutely check the temperature in the MES vs. what the setting is. Mine set at 205 gives me between 218 and 229 on average so I use that setting for when I want 225. At 225 I get an actual temp of 237 to 249.
These temps are for winter and summer, windy and not, so your mileage may vary...
