hello I want to try to explain it.
the oven is heated up to 400 grad Celsius. Then the ashes are cleared out.
The oven is fully insulated and has 6cm thick fireclay stones (schamottesteine). this keeps the temperature very well
The bottom from the pizza is perfect.

yesterday i made a pig shoulder in the wood fired oven.
i started by 160°C at 09:30. two hours before the shoulder was finished I made another fire to increase the temperature in the oven. The oven had than a temperature from 280°C. we start to eat at 19:00 the meat temperature was 81°C.
