Lump half went out in WSM

Hey all, So it’s my first time smoking a brisket in a WSM I recently picked up. I have done ribs and chicken in it multiple times and it held temps perfectly. Last night I tried using jealous devil lump charcoal for the first time. I started the cook at 10:30 PM. I’m probing the top grate with...

Thinking of starting a brisket the night before, tips?

I don't think the foil will make any difference taste wise. I use at least 2 charcoals per load to get a decent ring but I load once an hour. Not sure if 1 briquette still does the job but let us know!

Brisket butcher paper wrapped on MES

Thanks! I should also mention I'm at a high altitude at about mid 6000ft range. I feel like this affects smoking time too

Brisket butcher paper wrapped on MES

Just salt, pepper and garlic. I've found that combo to be my favorite.

Brisket butcher paper wrapped on MES

I just wanted to share this juicy brisket with you all. Well the photos at least:)o_O;) It was a 9.5 lb one I got at Target for 2.99 a lb. Smoking time was about 10hours @ 235. Used pecan wood, I think it took longer because I was opening to spray ribs I was making at the same time. Enjoy!!

I've done one over night in the MES. I'd say just start it earlier so you can keep adding wood. Then once you wrap you can go-to bed no problem.

First attempt at butcher papered baby backs on the MES

So I decided to give the MES a little test today, back back ribs. I have been using butcher paper on briskets for a while now and figured why not try some BB ribs! For the rub I mixed pepper, salt, onion powder, garlic powder, paprika and cayenne pepper. I used some yellow mustard to bind it to...
