What is your preferred method of finishing off a smoke? I've always used peach paper after a good bark, but some use tinfoil to tightly seal the meat and keep moisture in. Does that soften the bark too much? I have yet to try it
Quite normal for temp fluctuations. On my camp chef, if i set to high smoke, the range can be as much as 30 degrees. If I dial in a specific temp, it will keep it rock steady. But you dont need that unless your baking/smoking bread, etc.

Started my first pork butt at 6am this morning. Recipe says smoke for 12 to 13 hours at 225* and remove at 205" internal. If I reach 205 before the time frame, Im assuming leave it smoking for the duration?

Just wanted to update everyone. I emailed camp chef and mentioned why in the world would they make such a limiting temp probe. In the end, there is no updated one available from them. So it looks like I have a sports car with bias ply tires.
