When I do a brisket, I get it in the smoker at about 4AM and keep the smoke going for about 6 hours. There's no getting around that with the MES. It is usually ready to pull out by 4PM. Then wrap it in a couple of towels and place in an ice chest for an hour or two to let...
Nice job on the ribs! I have the Masterbuilt XL just for the ability to put whole racks in. The Masterbuilt smokers are awesome once you modify to your liking.

Since you only have one probe, you can use it to check your smoker temp by getting a small potato or onion and push the probe all the way through it so that the tip is sticking out of it. Then put the probe in the smoker making sure that the probe doesn't touch anything metal or it will ruin...
Looks good so far. You can sit in the cooler for at least 2-3 hours. It will be still hot!
Pork butts and briskets are done when their done! This one only took 10 hours and the next one will take 14! They're all different. Good luck! Looks great!

I found that I get a lot more smoke from apple wood than other woods for some reason. The AMNPS is slow burn in a small quantity. Like Scarbelly said, you don't have any control over the wood burn rate. It all burns at the same time whereas the AMNPS burns from one end to the other.

Burnt ends are like little bites of meat candy! Tiny pieces of heaven!! You gotta try 'em!!! There are plenty of posts here about burnt ends. It's a must when doing a briskey!! Oldschool's ends look superb!
