Anyone make their own hot dog out of venison? I know many years ago my dad and uncle had a butcher make some it was a mix of I think 50/50 Pork/Venison. Do you use a kit or do you have your own recipe that you wouldn't mind sharing? What casing do you use?
After much research it seems it's fairly easy to override the A/C thermostat to get the A/C to cool colder than they are designed to by factory. The hard part is preventing the compressor from freezing and burning up. It can be done, but takes some knowledge. For the little bit of saving I...
Tossing ideas around of how to build a cheap "walk in" cooler. By walk in, I mean to be able to hang 2 deer)) It will only be used if temps are warm during hunting season to allow the deer to be hung longer until I can process them. I've read up on coolbot and they seem like a good option if...
I've only used the smoker twice, both on days where it was in the 90's. So far the firebox is really larger than needed. I build a fire and get good coals and it only requires a stick of wood (3-4") in diameter about every 45 mins - hr. This was keeping the smokehouse at 225. I mainly built...
Added a register vent to the back wall for the 2nd smoke and it made a world of difference. Temps stayed steady at 225 with ease.
Did a brisket on the 2nd smoke. I wrapped it about halfway thru. Looked good and tasted good, but got a little dry on the non point end.
Smoked my 1st pork butt. Temps were a little hard to keep steady during the duration of the cook, but from the bottom rack to the top rack was only a 1 degree difference. I didn't bother to wrap the butt, and that was a mistake. Had good flavor and the whole family liked it, just the outside...
My plan was to make it so I could pull the racks out, but since I framed the doorway my racks are a little wider than my doorway. I can still get them out but I have to tilt the one side up. Not idea, but it works.
I made 2 vents in the firebox door. The bottom one works as a damper. The...
I don't have a material list. Half the stuff was left over items from other stuff I've done. The base of the smokehouse is 40"x40" and is 3 rows of 8" block high. There's a 16" space (1 cinder block) between the smokehouse base and the firebox. I did buy 65 full firebricks to line the inside...
I been asking questions and reading on this site for a little while and finally got my smokehouse done. I have since added a register vent to the top back of the smokehouse and I am able to hold the smokehouse at 225 with ease.
Building a brick firebox. Which way would be best for the top of the firebox?
I think the arc design lined with firebricks is the best, but not sure if I'm capable of doing it so I'm hoping to keep a flat top.
I have a 1/4" piece of steel I was going to use. Was going to line the sides with...
What size expanded metal are you guys using to make racks for your smokers or are you using something else to make racks? Also how are you seasoning your racks before use?
