I have no idea what a local bbq place would charge, I guess I should check that out. But I'm also not having to supply the meat, so that has to be factored into the charge.

I use a Fiskars splitting axe, the biggest one, and a sliding compound mitre saw from Harbor Freight to cut my splits down to size for my Lang 48, it works very well. I only use Hickory, which may not be as hard as oak, but it still works well on seasoned splits.
I would say if you have all the smoke you want you either have to wrap the meat or just use charcoal. However, I've never had too much smoke from using only splits, especially if you have a clean hot fire burning.
When I had that smoker I found it hard to keep the temps on the lower side, it always ran hot for me. But since I sold that and got my Lang, I've gotten better at fire management. If you want a lower temp build a small hot fire and keep it small, using small pieces of wood added only when more...
Why not get both? The kettle will be better suited towards grilling and shorter smokes. I've never used a WSM, but I've heard nothing but great things about them, I'd guess if you want to smoke butts and briskets the WSM would be the better choice.
