Co-Worker wants me to smoke ribs - How much should I charge?

Yes, I'd be smoking them on my Lang 48 Patio, the one in my avatar, and no I don't get my wood for free, sure wish I did. She won't be needing them till August, so no doubt it will be hot out when I have to cook them. Thanks for the advise, I'll take everything into consideration. I definitely...

Co-Worker wants me to smoke ribs - How much should I charge?

I have no idea what a local bbq place would charge, I guess I should check that out. But I'm also not having to supply the meat, so that has to be factored into the charge.

Co-Worker wants me to smoke ribs - How much should I charge?

I smoked 6 racks of baby backs for a work event, and now a co-worker wants me to do the same for her upcoming anniversary. She would supply the meat, but wants to know what I would charge to do this for her. I've never really done this as a service for anyone before, and have no idea what a fair...

Opinions on Wrangler II and Pecos

The old Wranger had much thicker steel, if I were to choose between the Wrangler II and the Pecos, I'd take the Pecos for sure.

How do you chop your firewood down to the Karubecue C60 size brick or redbull can size? Axe recommen

I use a Fiskars splitting axe, the biggest one, and a sliding compound mitre saw from Harbor Freight to cut my splits down to size for my Lang 48, it works very well. I only use Hickory, which may not be as hard as oak, but it still works well on seasoned splits.

New Horizon Classic 20" have questions for using wood

I would say if you have all the smoke you want you either have to wrap the meat or just use charcoal. However, I've never had too much smoke from using only splits, especially if you have a clean hot fire burning.

    Pork Belly

Was just a the local Sams club and saw they had pork belly, I've never cooked one before, but I think I may have to now.

Temp control on a Old Country Wrangler

When I had that smoker I found it hard to keep the temps on the lower side, it always ran hot for me. But since I sold that and got my Lang, I've gotten better at fire management. If you want a lower temp build a small hot fire and keep it small, using small pieces of wood added only when more...

Old Country BBQ Pits Pecos Owners Thread

They are garbage from my experience, not at all accurate. Save up and get a nice digital one, like the Maverick.

    Weber Kettel or WSM??

Why not get both? The kettle will be better suited towards grilling and shorter smokes. I've never used a WSM, but I've heard nothing but great things about them, I'd guess if you want to smoke butts and briskets the WSM would be the better choice.

    best commercial offset smokers

Also check out Cauble Custom Fabricators out of NC, he's also a member on the board and he makes some really nice stuff that is very reasonably priced. He's also got a facebook page if you want to see plenty pics of his work.

    Yoder Smoker question

I would always opt for the larger model if possible, also it's easier to control/maintain temps with a larger smoker.

    Lang vs Pitmaker

Check out cauble custom fabrications, he's a member on this site and is pretty local to me in NC. He does some really nice work and builds custom pits, he makes lots of reverse flow stuff too, I'd contact him for a quote on what you are looking for. You can check out his facebook page for lots...

    Wrangler vs Pecos

When I had my Wrangler, I found that it was too small for my liking, even though I could fit pretty much everything I needed on it. I also had a hard time keeping the temps low enough, and the upper grate was pretty much useless for most things. If I were to do it over again, I would have gotten...

    Make it stop please

That Brazos is very nice, but not sure it's worth twice as much as the Wrangler, but still a great buy compared to what else is out there for that price range. You can't even get a Lank 36 patio for that much, so it is a pretty good buy, considering how well it's built, and how big it is. Just...

Which smoker would you recommend from these three?

I second the Pecos, I had a Wrangler and thought it was pretty good for the money, would have been nice to have more space like the Pecos has, even though the metal isn't as thick, it's still the best thing you can get for the money.

    Offset smokers and burning wood.

The horizon 16" classic smoker at Bass Pro is nice too, and not very big

    Old Country Wrangler Temps (again)

The temps are hottest near the firebox, and right where the stack is, I tried not to place anything right near the stack if I could help it, but maybe using a tuning plate with a water pan underneath it would help even out your temps.

Officially a member of the OC Wrangler Crew!

Congrats on your new toy! I didn't find the OC thermometer to be accurate at all, so you may want to invest in a decent digital thermometer as well.
