    Knife Used to Slice Ribs

Lots of success with a brisket knife. Boning knife works too.

    Tomahawk ribs

I'm with Chile. I would go indirect then sear on the kettle. Doing a sous vide with big tomahawks is a pain. One small tip...if you are into presentation, foil the bone as you smoke. It will keep it from getting too dark.

    Getting the hang of it

These were STL. Got through the cartilage no problem. The bones may have just been different than others I have done before. I like that vertical trick. Gonna try that for sure.

    Getting the hang of it

Thanks, Al. Was really pleased with the color on these. On another note, has anyone had any trouble when it comes to carving the ribs up? I'm thinking I will need a good brisket knife to cut these properly. I kept running into the bones as if they were not running in a "straight" direction...

    Getting the hang of it

So this is the first somewhat decent cook on the OK Joe. Done some wings and brats, very short and easy. Decided to get some ribs on there since they were $0.99/lb. Simple rub: salt, pepper, paprika. Went a bit heavy on the salt IMO, so will tweak that next time. Maybe balance it with a...

    Big bones!

Very lucky, and a good friend. I have been dying to go in there. Need to find friends in the restaurant biz.

Looks like I will have to start my pop up bbq business sooner than I planned :D

    Big bones!

Don't you need a membership to shop at restaurant depot? And don't you have to have a business license/resleller's permit to buy there? Always wanted to shop there, but that was the drawback.

Charcoal & Wood or Just Wood?

Very true. I notice I have to let my new splits catch and burn for a bit before shutting the main firebox door, while I leave the side door wide open. Stack is also wide open.

Charcoal & Wood or Just Wood?

Sounds like you are all set. Someone will correct me if I am wrong, but stay away from the pine. You didn't say you were going to use that for smoking, but wanted to make sure I threw that out there. I'm so glad someone on here is in literally the same position I am, and having the same...
