ET 732 and MES30 Temp not the same?

  1. While starting up my MES30 this morning to get up to Temp I used my ET 732 Temp Probe for the first time and noticed 20* degree

    swing in temp! Which should I believe? Going to Smoke a Pork Butt and want to maintain 230* degrees...................................[​IMG]

    MES30 holding at 255* & ET732 holding at 275* for test purposes.

    After purchasing a MES 30 w/glass door and reading this post I contacted MES for info on how to calibrate the internal probe.  I noticed that my Therma Pen and MES probe were within 3 degrees of each other but wanted that final check.  I was informed by MES to insert the probe into a pot with boiling water.  When I did this I saw the probe temp was 211 degrees  I then inserted the Thermal Pen and got the very same reading  Case solved.

    Hey Stoney...
    Did you try calibrating the probes to see which one was the most accurate? I found my MES probe(s) to be off by around 10-15 degrees (off more, the higher the temp) but the hybrid probes that came with the Maverick are within a few degrees regardless of the temp range...

    Not too worry, all is well. Temp stabilized and all is good. Butt stalled like it should at 167* for 2 1/2 hours and
    now it's back on the rise. Been spritzing with a combination of 50/50 apple juice/apple cider vinegar............
    Bark looking good and we'll be having Pulled Pork Sandwiches, Cole Slaw, and my Special Pork & Beans
    tomorrow while watching Football all day..................................................................................
