Well I fianally found a place that carries pork belly's. Someone here once told me to try an Asian market. Go figure why would my American stores just laugh when I ask for them, but my little Asian buddies have any part of the pig you want? SOOOooooo I still have a ton of BuckBoard Bacon cure left.The only other time I made bacon I used a butt. Turned out nice, but now I have a real pork belly. This is going to be the longest 10 days. I have 3 belly's so I'll probably do 2 of them. Give one to the neighbor(gave me about 10lbs. smoked salmon, some one from a Jewish deli owed him money so he paid him off with smoked salmon, and he doesn't even like it)and keep one for me. The last one goes in the freezer.
