Just a quick question, is there a way to smoke a turkey without getting the deep dark (dry skin). If i were to baste the turkey with butter and paprika could I prevent the whole dry leather dry split skin?
I baste mine with Cajun butter throughout the smoke. End up with a bright red tint to the skin

Tony chacherie makes one too. Either will work or you can make your own. We do Cajun brined turkeys so this works great for us
