I saw theses things in the cooler box at restuarant depot and I had to get them. Now they were listed as short ribs but they are about 8" long and look good. Now a little mixture of Old Bay and some brown sugar we were ready for the smoker in the morning. Now the smoker is set at 240° and ready for the ribs.
Now after the first leg we're ready for the foiling and another segment in the smoker this time with a foil blanket.
Now out for some non-foiled time and a taste for the wife. If she approves we will be in there. With the big thumbs up were going back in for the rest of the time needed for some yummy ribs.
Now for the smoker cam.
After a short 30 minute rest were sliced up and ready for the plate.
I thought this might give you a reference to the size of theses things.
