Split between Michigan and Texas
Haven’t posted in a while, this was tonight's dinner. The steaks were not very well marbled so I Sous Vide them at 118 degrees for almost 4 hours then onto the hot coals in the wood stove to sear in a crust.
Coals are ready.

I put the steaks in a basket, it makes it easier to flip and get out. Set them right on the coals.

While the steaks were still in the Sous Vide bath I made up a mushroom, garlic, parm cream sauce and boiled up some linguine. Let the steaks rest for a bit then plated it up.

Served over the noodles with a sliver of parm and some broccoli.
We enjoyed it, thanks for looking.

Nice ! I've done hot dogs in the fireplace , and have thought about a way to do pizza .
That's great use with the steak . Nice job .

Do that on the offset after a good smoke. Love a wood coal sear.
