Been awhile since I posted here, Have some health things going but here's what going on the table today. Dry rub porchetta seasoning marinade all morning then on the smoker for 2 1/2 hours. Using cherry wood and don't kill me but Kingsford brickets. Holding the grill at 225. I'll post the finished product when done.
