Name is Chris - still learning at this point. I have smoked quite a bit of fish thus far (mullet and amberjack), but not much else. Smoked fish spread is a bit of a staple at my house. We are at the tail end of a family project of sorts - converting two 55 gal drums into a large smoker, generally following guidelines shown at this site:
