A big hello to everyone at SMF. Recently purchased at Brinkman vertical propane unit. I run a small restaurant up here in Seattle and thought we could have some fun with this unit, do some specials etc. I've got 20+ years of kitchen exp so I know my way around the kitchen. Found SMF pretty quick as I was looking for some info about butts. Man I love the internet, just a ton of great stuff on here. For instance I never knew about foiling the butts, great idea makes perfect sense and tried it on my first run. Wow just amazing results. Ran pulled pork sandwich for a special last week and we got rave reviews. It will be a regular menu item soon. All I can say is I'm gonna be smoking a bunch of stuff now. In fact I just ordered a GOSM Big Block yesterday, looks like Bass Pro has 'em on backorder so in the meantime me & the Brinkman will be working out some more recipies. love the forum and plan to make great use of it.
