Since the Victory Garden is producing nicely....figured I would go mainly Veggies for dinner. If yall don't know what Fried corn is....will show ya with some pics!
Start out with a bunch of fresh ears of corn. I used Bi-color from a local farmer's market. Get a Bundt Pan and a sharp knife.
Shuck the corn and get all the silks off. Put the smaller end in the hole of the bundt pan. Go to town...cut the kernals off and use the back of the knife and scrap the cob to get any "milk" off the cob.
The bundt pan works great to hold all of that yummy goodness.
I use a Cast iron skillet, salt, pepper and about 1/2 a stick of butter. Let the butter melt in the skillet and get bubbly....throw that corn in and "fry" until it's just done. Will still be a bit crunchy and YUMMMMM!
Here is the rest of dinner last nite!
Here was my plate....don't eat maters...but the others did. Slice of Ham, boiled cabbage, green beans, fried corn and corn bread. I was hungry!
Nice hot slice of corn bread.

Baked maters fresh from the garden. Salt, pepper, Italian Seasoning and a slice of provolone on each one. Bake at 350* until mushy and the cheese gets browned.
