Do you use foil to "finish" your meat?

I've done both, it seems if you foil a pork butt at around 160, it doesn't have much for bark on it, maybe I'm doing something wrong, the butt that I didn't foil really looked good (nice bark), and the one I did foil (160) didn't have the bark but tasted very good also, is it just a preference to foil or does it help??
