While scouting for meat at the grocery stores I actually came across some decent chuck roasts on Saturday.
So I decided to go ahead and smoke these puppies in my MES40 for Monday's dinner. Enjoy!

My plate here. I top it with my bbq sauce to complete it. After smoking i put it in a cooler to rest for a while and let the juice absorb back into the meat. The crust don't get mushy at all. Even with smoking the heck out of it. The flavor of the rub still stands out.
Used maple pellets for the smoke.
Tonight's dinner was great.
I love doing roasts in the smoker. They always come out perfect.
