A local church has started a community dinner once a month and came to our work to ask us to sponsor it. So about 10 of us jumped right in. They decided it would be taco night. There was 20lbs of ground beef, enough black beans to feed 250 people and all the fixings. This was only the 3rd month doing it and we had about 95 people there so it wasn't too bad. I will be doing this again as it was just a pleasure to help out the community. I made chicken.
Got 13 lbs of boneless thighs. I marinated them in the zest and juice of 4 limes, chili, garlic, salt, cumin, Hungarian paprika, cayenne, and evoo. they set for about 2 hours.
I then threw them on a hot grill to cook. Coated with my spice rub.
Foiled in disposable trays. Reheated with a little chicken stock at the church. Then sliced.
I haven't done alot of Mexican food so it was a somewhat new road for me. I was extremely happy. It was great. Even had some folks from Mexico tell me it was really good so that was great to hear. It was also great to see that all but 1 of the people who got seconds came back for my chicken
