My buddy ken shared some venison pork breakfast sausage at the deer lease last weekend and it was some fine stuff... So good I wanted to make some myself so here we go.
4 lb 3/8 ground venison
1 lb 3/8 ground pork tender loin
2 tsp's of Uncle Buck's breakfast sausage seasoning per lb of meat
1 oz water per lb of meat
Mix till tacky and package or pattie as you please

that's the way the package reads I added;
4 tsp's ground sage
4 tsp's crushed red pepper and seed's

Mamma and I had some this morning was some good stuff...
 
Your making me jealous. We are out of venison. Well there is some standing right over there but............
 
You just can't beat venison sausage! Last hunting season, I made all hot Italian out of the deer. I also have quite a bit of ground venison that I mixed 50/50 with ground pork butt. Not to mention just a whole freezer full of elk steak, roast and burger! Just trying to make you jealous!

TH I can always hope for santa and yes I did save some for the lease.
