Hi all, been awhile since I've been on this site. I was able to buy 6 lbs of bulk breakfast sausage. Was thinking of mixing it with 6 lbs of venison. Do you think I would have to add any spices or is there enough in the breakfast pork sausage already ?
 
I would only add 3 lbs if I was doing it. 50/50 isn't a good mix for what I like.
 
Do a test fry with the breakfast sausage, and take note of the seasoning profile. I doubt you have thawed venison to do an actual 50:50 test cook but I bet you need to add some salt, pepper and garlic to account for the additional un-seasoned meat.
