So I am one of the lucky few that have their own beef butchered every year. Last fall when when we had our steer butchered my hubby took it to the butcher shop. He told them we wanted the brisket, because if you don't the add it to the ground beef. Well I had been saving it for the 4th. I went to unwrap it today to rub it to smoke tonight and guess what they did to it. The REMOVED the fat cap. So can I still smoke it without the fat cap. Someone suggested I lay some bacon on top of it to act as a fat cap. Please help me what is the best way to deal with this brisket.
