Desired to smoke a steak for the holiday weekend so I went down to the local butcher shop and traded some homebrew and some Ghost and Salvina pepper plants for a specially cut steak. Brought it home and gave it a little shake of SPG and rosemary. Put it in MES on 235*(temp registers higher than it should by 15*). I then Let is bathe in applewood smoke ( I put it in right from the fridge to help it from over cooking while smoking). I then took it from the smoker to the grill for a nice Flame kissed bark which I brushed with garlic butter when I flipped it over. Plated it all with Brussels sprouts as a side.
