You know, every time I see "armadillo" in a thread title, I keep thinking one day, I'm actually going to see some smoked "armadillo" (the 4 legged kind).

Good looking grub there!

ha,

being a newbie here i was looking and looking for the armadillo eggs.

I have always called those bacon wrapped stuffed jalapenos "ABTs" or Atomic Buffalo Turds.

I learned armadillo eggs as a whole jap pepper stuffed with cheese and such and then wrapped in ground pork sausage and then smoked.

An Armadillo down here is a piece of chicken in a jalapeno wrapped with bacon.  An ABT typically has cheese.  And an egg is as you described.  But I am sure it all differs depending on where you are from!
