Ever since I saw a recipe from All Things BBQ where they made a smoked bologna roll, I've been dying to try it. Yesterday I finally did. I followed his basic recipe with different spices. First I rubbed a thin layer of mustard on to act as a binder for the spices, then I hit it with a coating of sweet and smoky BBQ rub.
As you can see from the top picture, I smoked it using applewood. Approximately 2 and 1/2 hours went by, and then I whipped up a glaze using regular Heinz ketchup, and chili powder. The combo was fairly close to what I was aiming for. After a quick glaze, I let it stay in the smoker for about another half hour, and pulled it. The finished product shown below.
The end result was DELICIOUS! Not only did I like it, but my kids who are allergic to trying new things absolutely loved it as well. An overall win in my book! After I let it cool I used my meat slicer to make 1/4" thick slices, vacuum sealed it all up and tossed it in the fridge and freezer. We'll have sandwich material for quite some time!
