No foil St Louis Ribs w Qview

Just threw a couple racks of St Louis ribs into the WSM. Planning on no foil for about 6 or 7 hours. We will see how they turn out. Windy day today so I had to wrap it up with a welding blanket.

Rubbed with season salt sugar pepper and vinegar on one and SPOG on the other

Well it ain't that cold here in Orlando but to me 48 is cold enough. The wind is what's miserable. This is the first time I have used a welding blanket and it works amazing. I thought my thermometer was broken because the temp didn't move up or down even one degree for an hour and a half. I'm 4.5 hours into this smoke. I'm in the home stretch now!!!! Won't be long!!!

Finished product wasn't my best but was pretty darn good. Too tender for my liking tho. Everyone else in the family liked them so that's all that matters. Here's a few pics.

They look great. Nice smoke ring as well. No foil ribs are the best :drool

They were even better today as left overs. Two full racks of St Louis Ribs only lasted 2 meals for my wife my 3 yo daughter and me. I probbaly ate more than a rack just myself. I think I have a problem
