So, I smoked two 2LB chuck roasts in the MES with an AMPNS.

After pulling, I figured I would drizzle the drippings from the foil onto the pulled beef. Waste not, want not, right?
Then I busted out the enchilada sauce, tortillas, & cheese:
I mixed the two jars of enchilada sauce together. I then tossed the pulled beef with about half of the sauce:
I then took white corn tortillas and wrapped the beef mixture. Wrapping the beef is made easier when you microwave the tortillas for about 20 seconds(do it in batches of 4 or so.)
Spoon the remaining enchilada sauce over them.
I then heated up the queso blanco sauce to drizzle over the enchiladas.
At this point, I was planning on topping with some crumbled queso fresco. However, after tasting the queso blanco sauce, I thought it would be overkill. I'll save it for another day.
Now it's ready for the oven. No need to cook, just heat up, so I would guestimate 350F for 30 minutes or so. I also wasn't too hungry after snacking on the pulled beef while I was working. So, I guess this will be tomorrow's lunch.
