Smoked in Weber kettle with oak chunks
After about 3.5 hours at 230F
Beef broth, pepperoncinis with juice, onions, parsley, onion flakes, thyme, chives, dill, oregano
Placed in Dutch oven
Braised at 325F for 1-2 hours
Remove meat, rested, then sliced.
Separated fat from liquid, recombined in Dutch oven and cooked additional 45 min at 325
Sandwich on French bread - so good
And again the next day - so good
