First Chuck Roast with my new AMPNS

I just got my AMPNS and naturally was pretty excited to put it to good use.  I haven't done a chuck roast yet and thought I'd smoke it to pull for some enchiladas.

I picked up 2 2LB chuck roasts at Wallyworld at about $4 a pound.

 
Last night, I coated them with a mixture of Vanilla Java Imperial Porter, worcestershire, and dijon mustard.  Then I coated them with rub.


The rub I made was based on ChefJimmyJ's Run For The Border Rub.

2T Sea Salt

2T Guajillo Chili Powder

1T Chipotle Powder

1T Mexican Oregano

1T Gran Garlic

1T Gran Onion

1T Fresh Ground Black Pepper

1T Pequin Chili Powder

2TSP Ground Cumin

1TSP Cocoa Powder

1/2TSP Cinnamon

1TSP Celery Salt

1/4C Turbinado Sugar

1/4C Dark Brown Sugar

Wrapped in plastic wrap and put in the fridge overnight


Into the MES at 240F

I noticed there was very little smoke.  It was almost invisible.  Was this the TBS of legend?  I really wanted to open the smoker to make sure the AMPNS was still going.  I have read posts on here of them going out on some people.  But I figured it smelled like smoke and I could see some small wisps going out, so I just trusted that it was going and didn't open the smoker.  Here it is after 3hours:


But look!  OH NOEZ!  The AMPNS did go out!


I suppose the smoke was from some leftover chunks from the previous time I used it.  This is where I am at now.  I relit the AMPNS and made sure there was a good ember going.  The IT of the top one was 155F and the bottom one was 150F.  I don't have one of those fancy electric probes yet, so I had to open it up to check with my analog probe.  I will check on them again after 30 minutes.

Now I'm just waiting to pull.  The AMPNS just wouldn't stay smoking.  I'm not sure what's going on.  I had the vent on the MES open as far as it allows.  I'm not sure what I could do to improve air flow.  Perhaps I need to make sure the pellets are more tightly packed in there?  Anyways, it looks like the chuckies got some smoke.  Further experimentation is called for.  I think next time I'll try it on a fattie so I'm not as worried about opening the door to check on it.

Make sure you have good airflow to the AMNPS or it will go out.

Also, opening your smoker too often will lengthen your cook.

Looks like a good start though if you can get your smoke going.

I have the vent open all the way.  I just took a look at the vent and am worried it might have gone out again.  I'll keep you guys posted after I check IT again in a few minutes.

EDIT:

Well, it did go out again.  IT was unchanged after 30 minutes, but considering it took half that time to get the MES back up to temp, I'll be checking IT in hour intervals now.  AMPNS is going strong now.  I now have a clearer understanding of what kind of ember you need to keep it going.
