First time Side ribs

Here are 2 sets of different quality side ribs, one cost me lots of money and the other was 9,99 at walmart, you will see how the ones that cost more shrunk and the meat on top of the bones disintegrates .

I still did not like the reuslt, the meant was not as tender as I would have liked.

Here is what I did.
  1. MArinated with rub night before
  2. Preheated MES 30 to 275F
  3. Using the Mavrick Digital thermometer
  4. Put ribs in onece I saw smoke and turned down heat to 225
  5. Used 3-2-1 method
  6. Smoked for 3 hours with temp from 225 to 230

After 3 hours pulled out rerady to foil with apple juice and Cider


pur ribs back for 2 hours in foil and this was result.


Not much pullback not sure why?



When I pulled these out of the foil I saw that the meat was not separating  that well, I should have left them in for another half hour.

Also I noticed that the last hour sometimes dries out the ribs, has anyone found this out?

  I have not had much pullback on Ribs I have made, especially if meaty/fatty. It looks like the ribs that fell apart may have had the Belly removed very close to the bone leaving little meat on top of the rib bones so the meat between will recede more. 3-2-1 is a good starting point now adjust it to get what you like. More time in Foil gives more tender, Fall of the Bone, Ribs. Try 3-2.5-.5. Yes Ribs can get Dry during the last hour out of foil, many like the firmness. The last hour is a perfect time to apply sauce to add that last layer of flavor and moisten if getting too dry...JJ
