Hadn't tried one of these before so pulled it together over the weekend.  Used 1.5lbs of ground chuck, and .5lbs of mild italian sausage.  Added green peppers, onion, mushrooms, a diced tomoato, egg and bread crumbs.  I didn't add any spices too it, felt the little bit of sausage was enough.  Mixed it all up and formed it into a ball.

Was about 2lbs total weight and holding together nicely.

about the 2.5 hour mark I brushed with Jeff's BBQ sauce.  let it go for another half hour.  and this is what came out.

Over all turned out really well.  Wife loved it, and she normally doesn't like my meatloaf.  More of a lipton soup mix and beef kind of girl.  Next time I will stuff it with some cheese. 

Roasted some corn, and cooked up fresh green beans to go with, but no pics, sorry.

Man this looks so good! I am planning on adding sausage to my next meatloaf too. I think mixing in some cheese is a great idea as well.

Any idea what you cooked yours to IT? I went to 160* per jeffs recipe and I thought it was kinda mushy for my liking. (this could be a result of my mom serving me dry meatloaf my entire life though)
 
Yes, it was 160 IT.  I actually pulled it about 157 then let it rest and it climbed to 160.  Was nice and juicy.
 
Love, love, love meatloaf.  Mom always did all beef, but I've played with 1/2 beef, 1/2 ground pork and also 1/2 beef 1/2 ground veal (this is REALLY good).  Done it with breakfast sausage and italian sausage also (both very good).   I sometime smoke them on the weber, and when I do, I just put it on pierced aluminum foil to drain as it cooks into a half aluminum pan that I get at Sams at $7 per 30.  Bastes itself as it cooks.  My favorite wood for meatloaf is pecan, but any fruit wood (apple, cherry, peach) does very well.  Good job man!
