I pick up some ribs and marinate over night with a mixture of brown sugar, Emeril's rib rub, ground pepper, and ground mustard. I put a couple of small apples, cut up in the water pan. After the 3 hour I put apple juice when I wraped in the foil. Then back into the smoker for 2 hours. I then took them out of the foil for the last hour. These rib were so tender the meat just fell off the bones. My wife made up the bake beans and I put them in after the first 3 hours. I cook at 225 to 240. I have to work the next 2 weekend I wll do this again real soon.
