We decided to have the big dinner tonite...

Her dad will be joining us.  Nice..

Winn Dixie had rib roasts on sale for 6.99 and they looked real nice,

Got a 6.5 pounder and SPOGed it yesterday.

Today it went into the wsm with local pecan at 225.

It is coming out at 132  and will get wrapped for a bit.

We also have peas,beans,mashed potatoes,potatoes au gratin,pecan pieand ice cream!!!

The roast turned out perfect...rare and juicy..

I love the local pecan for smoking.  Great flavor.

Out at 132 and covered for 30 minutes.

Mashed red taters with whipping cream and salty butter

What a great meal...

Merry Christmas guys and gals!!

Guess what we are eating tomorrow???

Got a crown roast for New years...

  Took the pic before au jus....oh well..
