I mixed and cased 4lbs of lean beef and 3lbs of chicken (2lbs thighs, 1lb breast) last night.  I put them in the fridge over night and pulled out today to smoke.

About two hours in the smoke.  Shouldn't be much longer.  I fried up a bit of each to try out before smoke and the chicken was unreal!  Perfect blend with the breast and thigh meat nice and juicy and the flavor is GREAT!!!!!
 
I'd like to say "Looks Great", but I would be nothing more than an echo!

A few pics along the way.  In the ice bath after smoking, I didn't have a big enough pot so I had to use the sink!

Final shot of one of the chicken ones!  They are GREAT!!!  2lbs thighs and 1lbs breast works great for keeping a nice juicy stick!!
