venison breakfest sausage ?

    I was thinking about making some breakfest sausage from venison and pork. Does ti matter what cut of pork you use? I was thinking of using shoulder but want to make sure. Second I see they have commercial box products for making sausage. Do you have a favorite or do you have your own recipies? THANKS in advance

    I've used both pork butt and pork shoulder in my sausage. Like em both.

    Here's the sausage recipe. You can really add what you like to it, just fry up a patty to do a taste test before wrapping and freezing.

    I used a mixture of...
    2 1/2 tsps of salt
    1 tsp fresh ground black pepper
    1/4 tsp of red pepper
    a dash or two of red pepper flakes
    and about 2 tsps of fresh sage
    This was for about 2 1/2 pounds of ground meat.
