Awhile back I posted the more traditional Calabacita con pollo I made. Really loved the flavors and ingredient wise with fresh produce dirt cheap at the local Mennonite garden stand and Sam's rotisserie chicken it's cheap too. Additionally with limited ingredients it's easier for me to document and track the calories. Decided to do it a little different this time. First up sauteing the banana peppers ( $1.99 for a big bag) and nice big candy onion. The candy onions are super sweet this year .
Added 1 lbs of diced rotisserie chicken ( mixed white and dark), 4 packets of Sazon Goya Achiote con Cilantro and 2T Better than Bullion Chipotle in 1 1/2 cups water. First time I've used that flavor of BTB and will use it far more often.
Simmered for about 45 minutes until the liquid was reduced.
That night I ate a few "tacos" using this and cabbage leaf but on to the end game. Zucchini halved and hollowed. )If I'd have used all the filling for boats it would have done about 7 boats. )
Filled with about one cup mixture per boat.
Since the filling was already cooked I prebake the zucchini at 400F for 15 minutes, patted off moisture, filled and then baked for another 20 -25ish minutes. At the end I tipped it with a very small amount of shredded cheddar. It would be awesome buried in cheddar but I'm keeping the calories lower. After cooling a little I topped with Mexican crema, a,drizzle of thin taco sauce, fried jalapenos and a chef's kiss of cilantro.
Nothing fancy here but I'm more and more convinced that delicious food doesn't need to be overly complicated. This stuff is delicious and healthy with the filling being about 288 kcal per cup. Gave the small one to my neighbors who are packing for vacation so figured it would make supper for them. They loved it. Thanks for looking!
