Since I had ordered the Nesco Sealer and it arrived today, I would need something to vacuum seal.
A brisket seemed like a good candidate.
The vacuum sealing will be tomorrow to give grease time to solidify.

This was normal price when I bough it.

No pics in smoker as I did this over night. Just shy of 16 hours.
2 hours at 175f, about 11 at 275f, and remaining time at 310f.
At 5:30 this morning IT was only up to 149f, and wasn't going make it for lunch at 275f, so bumped temp up.

Looks great! $3.99 is a good price! Funny I thought Smiths was only in Utah.
