Yesterday's smoked Corned Beef

Tossed on a 3lb Corned Beef on the pellet smoker yesterday. Just used S&P and smoked till 148 and wrapped so it would be done in time. I lost track of time and it got up to 208 when I pulled it. Had nice flavor but wife said it was not tender. I liked it a lot.. I used the smoke tube with some apple pellets to get a stronger smoke on it. Tonight I'm trying out the Turkey cannon with a chicken.

Thanks, I really liked just the kosher salt and course pepper. Sometimes you just have to keep it simple.
