Well I've honestly never made beef ribs before, so I'm very very curious to see how these bad boys taste, they're just finishing up as I type this, but the WSM can handle freezing weather without issue. I did use more fuel than normal but not nearly as much as I thought, so lesson learned, if you want to cook in freezing temperature, about 6 hours worth of fuel lasts 5 hours. I think i had about 2 hours too much charcoal today but you live and you learn.

Those ribs look fantastic!!! Fuel is cheap enough especially when you get result like yours.
