Any reason to not want wireless? If you don't want or need the remote readout, just don't use the receiver. If your reason is that you might pay more for this feature, I expect that any probe without this feature will not be less money. More important, since 99% of people want or need this feature, most of the quality products have this feature. Put another way, by getting a dual-probe thermometer without this feature -- if you can find it -- you may end up with something that does not have the quality, durability, or accuracy of the mainstream products.
FWIW, I can't imagine smoking without a thermometer that has this feature. Most smokes are 4-10 hour affairs, and it gets really old to go in and out of the house dozens of times just to check the temperatures. In addition, I have come to rely on the alarm feature which tells me when the food has come to a key temperature that requires me to spray the food, change the smoker temperature, or take other action.
I should also point out that the alarm feature has saved me more than once when the smoker has turned itself off, and I was alerted to go out and turn it back on again.
