WSM ?

I want to get a WSM but have a ? about the water pan it seems to me that the bottom grate is right over the water this won't steam the meat will it?. And if i put sand in pan instead of water do u guys spray the meat with apple juice or just let it cook. Thank you for your time.

water- sand,  tried both with mine and if you didnt know which way I used ,I dont think

 you could tell the difference in taste but a nicer bark without it.

  spritzing  is a definate yes!!!!!

No... the water pan doesn't steam the meat at all. I use water in mine and it all comes out great!
