Going to smoke a whole lemon pepper chicken and looking for some tips. What's the best type of wood to use with a lemon pepper seasoning.

My go to for chicken for smoking chicken is hickory but I think it could overpower the lemon if you overdo it.  I would take it easy on the smoke and would hit higher temps to crisp skin and brown the bird unlike most of my smoking so you preserve the delicate lemon flavor.  One of the popular lemon chicken joints (Cluckers) doesn't use wood at all and uses plain ole charcoal.  I think they are onto something...

I would try a milder fruit wood like apple. it has a mellow slightly sweet flavor. if you aren't wanting sweet then try a white oak. i find white oak has a woodsy but not over powering flavor.
