I can't seem to find apple or cherrywood in any form beside small chunks in a bag. Can I use the wood they sell in the store for home fireplaces and mix this with the chunks?

Where are you located?  I didn't see that in your profile.  You might want to try some of the local orchards in your area, most guys will give you wood for free if you offer to clean up their orchard.
