I had shrimp and grits at a restaurant in Georgia and loved them so much we bought the cook book. The recipe calls for white wine in the sauce but I wanted to find a substitute for that. I tried white grape juice and a couple other things I found on the internet but nothing made the recipe turn out right. The white grape juice was too sweet and the other things were even worse. Anybody have any good ideas?
 
Are you just trying to not use it because of the alcohol content? If so you may try to heat a little more than you need on a stove. Alcohol will cook off at a lower tempature than boiling (212) but I cant remember exactly what the temp is.

From my experience most liquids that you cook with burn up the alcohol when your cooking anyway.
