Mixing up 2.5lbs of willies sticks. Willies is a pre mix made by PS Seasoning which makes the cabelas seasonings.

Back in Dec i fell down the inside 3 steps of the 5th wheel. Knew i had new damage on top of the old damage years back. Shrug it all off so i could help out my wife during chemo. Last week i finally went to the orthopedic surgeon. Xrays done and he showed me the old injury and what i did in Dec. I fractured the Acromioclavicular joint, broke the Acromion and the Glenohumeral joint. He sent me to MRI because he said i have some tissue damage that the xray dont show. Did the mri yesterday. Doc said you been with this since Dec of 18? Yup He said wow you must be a tuff dood. Naaaa just stubborn.

Anyways

I had to get the KA out this morning to do the mixing of the sticks. I use the dough hook.

Here is 4.5T of the willies and 1/2 t cure 1 i will mix with water.

Going in the fridge for tomorrow stuffing. I finally get to try out my Pit Boss Vert smoker

That looks Rick. If you get the surgery you may have your arm "Strapped" to your side for up to 6 weeks! You need to take care of yourself sir. Hard to stuff sausage with 1 arm. May have to settle for patties.
 
Ouch, get better Rick.

I know somewhat how you feel. Last Sunday, I was going to load some pellets in the PB5 vertical smoker and ended up falling forward and slamming my knee on the deck. I look like I lost a fight with someone wielding a cricket bat on my right knee and lower leg. But what can you do? It is what it is....

And yes, I gathered up all the pellets and smoked the brisket flat anyway. That's how us old guys solider on...

will be watching, hope you heal up quick, my wife always calls me stubborn, she always tells me I wouldn't say crap if I had a mouthful. well anyway be careful, and get healed up. good luck

Ok now in the PB Vertical on smoke setting. Been pre heating on smoke for 30 mins, so far im seeing 135*

Nice finished product sir. (As usual). Love the (Bear) money shot. PS Seasonings show different Willies. (602 and 769) Looking for the tang but didn't know if this delivered or not.

Cant remember which one it was Number wise, it was just the regular.

Great looking sticks. Like! Two quick question for you if you don't mind:
1. is this all beef and if yes what kind of meat?
2. what grind plate did you use?

All beef 85/15 ground fresh from the mexican butcher down the rd, fine plate. And he grinds all his meats with diff grinder augers/plates for each, beef, chicken, pork so there is no cross contamination and in his freezer.

Well i should say SHE grinds and is a wiz with the knife also.
