will meat therm stuck on potato tell me cooking level temp?

if i stick a digital leave in therm through half a potato so the end is sticking out, will that give me an accurate temp on the cooking grate?

That should work fine. I have even drilled a piece of wood and stuck it thru with the tip sticking out.

Depends on the therm and how much you leave outside the spud?  You have to be sure the part of the probe that measures temps is well exposed.

With the Maverick, there is a neat little clip, but that is a dedicated pit therm probe which is different than if you are using a meat therm probe to monitor pit temps.

When I was using meat probes to monitor pit temps, I did something like this:
